Jerk Seasoning

Essential Jerk Dry Rub

A simple 5-ingredient rub to master the foundation of flavor.

Ingredients:
  • 2 tbsp Allspice Berries (ground)
  • 1 tbsp Scotch Bonnet Powder (or Cayenne)
  • 1 tbsp Dried Thyme
  • 1 tsp Cinnamon
  • 1 tsp Nutmeg

Instructions: Mix well. Rub generously into chicken or pork 24 hours prior to cooking. Use in combination with Jerk Paste for optimal flavor.

The core technique for creamy, separated, perfectly colored rice.

Key Steps:
  • Use fresh coconut milk (not canned) for maximum richness.
  • Soak the peas overnight (Gungo or Kidney).
  • Add a sprig of fresh Thyme and whole Scotch Bonnet (do not break!) during boiling.
  • The secret is timing: add the rice only once the liquid is reduced to a light simmer.

Potting Tips:
  • Use a terra cotta pot with drainage. Thyme hates wet feet.
  • Place near a south-facing window for 6+ hours of sun.
