Essential Jerk Dry Rub

Ingredients

  • 2 tbsp allspice berries, ground
  • 1 tbsp scotch bonnet powder (or cayenne)
  • 1 tbsp dried thyme
  • 1 tsp cinnamon
  • 1 tsp nutmeg

Instructions

  1. Combine all ingredients in a bowl and mix well.
  2. Rub generously into chicken or pork at least 24 hours before cooking.
  3. For best results, pair with a wet jerk paste before grilling.

Ingredients

  • 2 cups long grain rice
  • 1 cup gungo or kidney peas, soaked overnight
  • 1 can (or fresh) coconut milk
  • 1 sprig fresh thyme
  • 1 whole scotch bonnet pepper (do not break)
  • Salt and scallion to taste

Instructions

  1. Boil the soaked peas until just tender.
  2. Add coconut milk, thyme, the whole scotch bonnet, scallion and salt.
  3. Once liquid reduces to a light simmer, add the rice.
  4. Cover and steam on low until liquid is absorbed and rice is fluffy.

Steps

  1. Use a terra cotta pot with drainage. Thyme hates wet feet.
  2. Place near a south-facing window for 6 or more hours of sun.
  3. Mix a small amount of sand or perlite into your soil.
  4. Water only when the top inch of soil is completely dry.
  5. Harvest from the top to encourage bushy growth.
